Thanks for the intro, Beryl. Nice to see another NJ resident here. I'm trying to get back to a more raw diet, I did about 80% for about a year. I fell off the wagon after coming down with a sinus infection during the winter about 2 years ago.So I'm hoping I can do it through this one.

Thanks so much for coming to the prep class tonight. Orit found my brochure in the Hungry Hollow Coop last June and asked me to cater her wedding...400 people were a bit beyond my means at the time, having never catered anything before, but we develped a friendship and I offered to do this prep class for her as a wedding gift. I am amazed that someone so young as she could know so much about nutrition! She is such a beautiful soul and a true idealist!
Raw Ice Cream
4 cups of cashews soaked 6 hours
Meat from 2 young thai coconuts
1 cup coconut oil
1 cup agave nectar
2 vanilla beans1/2 Tbs. coarse sea salt
Put all ingredients in a high speed blender and fill with filtered water up to the 8 cup mark. Blend until smooth and creamy. Pour into a shallow stainless steal bowl and freeze until firm. Lasts up to one week.
I've got a surplus of cashew if you'd like some, I'll give them to you for free, but you'll have to come get them. Are you coming Nov. 18th to the Matt Monarch/Angela Stokes event in Chestnut Ridge?

As promised, here is the info on the raw food prep class...not in Monsey but Suffern.
Eating a raw food diet is not just carrot sticks and apples. Experience gourmet raw food prepared right before your eyes as raw chef Catherine Moon shares some of her culinary secrets with you and teaches you how to prepare some simple, yet delicious raw meals.
Cost is $25 at the door and all money raised will be donated to helping the sick in hospitals.
